Fiery peach salsa


I bought an attractive basket of peaches this morning. 

Tender, juicy, fuzzy, peachy orbs.
Little goody-goodies.

A little spice helps them achieve a less wholesome reputation!

8 ripe peaches, peeled and diced
1 jalapeno pepper, seeded and minced
1 small garlic clove, mined
juice of 2 limes
1 tbsp honey
2 tbsp cilantro, minced
1 green onion, thinly sliced
1/2 cup red pepper, diced

Mix and store in the fridge until ready to serve.

I thought so too, but maybe it appeals more to a runner/healthy crowd. I brought it to a wicked party last night and it was not that well received, maybe because it looks kinda unattractive? Anyway as head chef and attorney, I declare it tasty & healthy!

Ah, the perils of bringing something "too healthy" to the wrong potluck! But if you left some behind, you might get a delayed compliment, "everybody ate all the normal food, so I tried your dip, and it's actually better than I thought it would be." I speak from experience.

True, that. Maybe the fussy teenagers who live there discovered it the next day and ate it all up!
